Skordelia - Garlic & almonds Greek spread





One week in Greece gave me so much inspiration for this amazing, fresh and flavorful food, in every tavern, especially in Athens the vegan and vegetarian selection is just so big and colorful, no need to go to special restaurants and its great way to try all the local flavors, cheap , its a definitely a place to miss once you left it.

My plan is to bring several Greek recipe to the blog and I decided to start with one of my favorites, that I've ordered every time! Skordelia is a super garlicy spread that have so many ways of preparing it, different nuts, some use potatoes and some use dry bread, some use lemon and some use white wine vinegar, it's just depends on the location, family recipes and personal preferences




Ingredients -

* 100 gr roasted white almonds

* 150 gr crushed old bread

* 8 cloves garlic

* 300 gr water

* juice from 1 lemon

* 1\4 cup olive oil


Preparation -

* soak the bread crumbs in water

* blend together all of the ingredients

* taste and adjust flavors

* serve with olive oil and thyme

* keep in a jar for 3 days in the fridge
