Fava

Fava is yet another Greek mezze made out of yellow peas, it is really delicious and can be serve cold or warm

The flavor is nutty and creamy, super filling as breakfast, even though it's served for lunch or dinner, but coming from the land of hummus I have no problems eating it for breakfast haha.

In Greece we ordered it every chance we had, somedays twice a day!

The recipe is easy and can be saved in the fridge in a sealed box for 3 to 4 days

ingredients -

- 250 gr of yellow peas (fava beans) soaked over night

- 1 bay leaf

- 1 white onion

- 1 red onion

- 80 ml olive oil

- dried oregano

- salt and pepper to taste

- capers

- juice from 1 lemon

preparation -

- cook the peas with the bay leaf until soft

- strain and wash the peas, remove the bay leaf

- add bit of water to a pot, the cooked peas and the white onion dised, cook for 30 min until the onion is soft

- drain the water and blend the peas and onion to a smooth paste

- add the olive oil, salt and pepper

- for serving - put the fava in a plate, add some fresh olive oil, lemon juice, finely sliced red onions, washed capers and the dried oregano!

- eat with bread (or spoon)

enjoy!
