Salted crispy pastries

I love this little pastries. The dough is based on olive oil that gives it great flakiness and crispiness, they are just perfect for picnics and breakfast, they also freeze really well so you can definitely double the quantity and, freeze and take out as much as needed, That's of course if you won't finish them at the same day!





I filled them with potatoes but you can fill them in any thing you like! spinach, mushrooms or even tofu and lentils, the possibilities are endless!


Dough ingredients -

* 3 cups spelt flour

* 1/2 teaspoon salt

* 1/2 teaspoon baking powder

* 1/3 cup olive oil

* Teaspoon apple cider vinegar

* 3/4 cup lukewarm water


Preparation-

* Mix together the dry ingredients and add the wet ingredients

* Roll the dough and create little rounds using a ring (or a mug)

* Heat up the oven for 180c

* Fill them with a spoon of the filling fold in half and tighten up with a fork

* Bake for 15 min check after 12, they should be crispy and golden brown. Every oven is different so it might need and extra minute here or there





Filling ingredients -

* 5 cooked, peeled and mashed potatoes

* 1 onion diced

* 1 spoon sweet paprika

* 2 spoons extra virgin olive oil

* black pepper and salt to taste


Preparation -

* in a pan add the olive oil, the paprika, s&p

* when the pan is warm add the onion fry until golden

* add the mashed potatoes
